The water temperature is low and the temperature changes little throughout the year in Atsukishi.
Oysters grow slowly at low water temperatures.
The fish grows up slowly and carefully storing nutrients, and because it experiences a harsh winter, its flavor is concentrated and its meat grows plump.
It is said that oysters cannot be eaten raw when the water temperature is high, but the oysters from Atsukishi, where the water temperature is low, can be eaten raw all year round.

The meat is much tighter, and whether steamed or grilled, it is plump, rich, sweet, and mild.
It contains nutrients so nutritious that it is called "milk of the sea," which is comparable to mammalian milk.
